Process:

  1. Cut off tops of berries
  2. +
  3. Crush berries up in mortar and pestle till form a liquidy paste
  4. +
  5. Combine berries and sugar in pot. Bring to a slow boil
  6. +
  7. Cook rapidly till thickens, ~40 mins. Stir often to avoid burning

  9. Remove from heat, pour hot into hot jars with 1/4in head space. Process + 15 mins in boiling bath
