This recipe is a canning recipe, and good to use if you have strawberries
that are about to expire
Yield: 1 pint of jam
You will need:
- 1lb of strawberries
- 3 cups of sugar
Process:
- Cut off tops of berries
- Crush berries up in mortar and pestle till form a liquidy paste
- Combine berries and sugar in pot. Bring to a slow boil
- Cook rapidly till thickens, ~40 mins. Stir often to avoid burning
- Remove from heat, pour hot into hot jars with 1/4in head space. Process
15 mins in boiling bath
